CHICKEN & YELLOW RICE 
6 to 8 chicken breast halves
1 box UNCLE BEN'S® yellow rice
1 med. onion
2 (10 3/4 oz.) cans cream of mushroom soup
1 (10 3/4 oz.) can cream of chicken soup
1 1/2 c. grated cheddar cheese (sharp)

Boil chicken, cool and remove bones. Cook rice as package directs. Chop onion. Heat all cans of soup, adding 1 1/2 cans of water. Stir until smooth. Butter 3-quart casserole lightly. Add cooked rice. Place chicken on top of rice. Place chopped onion on top of chicken. Pour soup mixture over all. Top with grated cheese. Heat in 350 degree oven for about 30 to 35 minutes.
