PICKLE RELISH 
4 qts. ground cucumbers
2 tbsp. pickling salt
2 c. ground onions
2 c. red & green peppers, ground
4 c. dark vinegar
5 1/2 c. sugar
1 tbsp. pickling spice (I put this in a sm. piece of cheese cloth, then throw it away)

Mix cucumbers and pickling salt and let stand for 3 to 4 hours, then drain well. Add the rest of the ingredients and simmer everything for 30 minutes. Then can in jars. Makes 8 to 9 pints. (This is really good.)
