PICKLE RELISH 
12 lg. cucumbers
8 green peppers
10 med. onions
4 tbsp. salt
2 tbsp. pickling spices
1 tsp. turmeric
3 sticks cinnamon
5 c. sugar
3 c. vinegar
3 tbsp. celery seed
6 tbsp. mustard seed

Quarter cucumbers lengthwise and remove seed. Grind cucumbers, peppers, and onions. Add salt and let stand overnight. In the morning, drain well. Combine vinegar, spices, and sugar. Heat and add cucumbers, peppers, and onions. Simmer 1 1/2 hours. Place into sterilized jars and seal at once.
