PARSLEY TOMATO MARINADE 
2 tomatoes, sliced
4 tbsp. vinegar
1 tbsp. sugar
2 tbsp. fresh parsley or basil

Place tomatoes in shallow pan. Mix together vinegar and sugar. Pour over tomatoes. Refrigerate for at least 1/2 hour. Sprinkle fresh parsley or basil over tomatoes before serving. Can be used for other vegetables.
