LIGHT 'N FRUITY PIE 
1 (3 oz.) pkg. Jello gelatin, any flavor
2/3 c. boiling water
2 c. ice cubes
1 (8 oz.) container Cool Whip non-dairy whipped topping
Thawed fruit
1 pkg. graham cracker crust

SUGGESTED FRUITS:

1 cup whole raspberries, blueberries, diced orange sections, strawberries, or bananas.

1 (8 3/4 oz.) can apricots, sliced peaches or fruit cocktail, drained and diced.

1 (8 1/4 oz.) can crushed pineapple, drained.

Dissolve gelatin completely in boiling water, stirring about 3 minutes. Add ice cubes and stir until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice. Using wire whisk, blend with Cool Whip; then whip until smooth. Fold in fruit. Chill, if necessary, until mixture will mound. Spoon into crust. Chill 3 hours, garnish, if desired.
