BEEF VEGETABLE SOUP 
1 1/2 to 2 lb. stew beef
3 qt. water
1 pkg. frozen lima beans
1 1/2 c. diced potatoes
4 c. shredded cabbage
1 c. diced carrots
1/2 lb. cut green beans
2 c. tomatoes
1 c. corn 1 pkg. peas

BOUQUET GARNI:

2 1/2 tsp. salt
1/2 tsp. pepper
Tops & leaves of bunch celery, chopped
2 lg. onions, chopped
4 bay leaves, crushed
1/4 tsp. thyme
1 tsp. sugar
1/4 tsp. oregano
2 tsp. Accent

Simmer meat in 2 1/2 quarts water and make bouquet garni. Simmer meat and spices 3 hours. Remove meat and cut into small pieces. Add vegetables to soup with 2 more cups of water, 1 tablespoon salt and meat. Simmer 1 hour. Makes 6 quarts.
