BEAN RELISH 
2 c. Great Northern beans
1/4 c. minced parsley
1/4 c. finely minced onions
1/2-3/4 c. vinegar to taste
Salt & pepper to taste

Cook beans according to directions on package. Drain, rinse with cold water. Add remaining ingredients; mix well. Refrigerate and marinate overnight. Keeps well. Makes 1 quart.
