PEACH COBBLER 
1 lg. can sliced peaches or 6 lg. fresh peaches, sliced
2 c. sugar (if using canned peaches, increase to 3 c. for fresh)
Dash of salt
1 stick butter
1 tsp. nutmeg
1/2 tsp. cinnamon
2 tbsp. cornstarch
1 tsp. vanilla extract
1/2 tsp. lemon extract
Double recipe pie crust

Divide pie crust into 3 parts. Roll out very thin. Place 1 crust in greased 1 quart baking dish. Put 1/2 of peaches, sugar, salt, dots of butter, cornstarch, cinnamon and nutmeg into crust. Place another crust over this and put remaining ingredients on this crust. Place last crust over it. Dot with butter and sprinkle top with sugar and nutmeg. Bake 1 1/2 hours at 300 degrees or until golden brown. If you like extra crust inside pie, cut up 2" squares and place in dish within other ingredients.
