BRAN MUFFINS 
1 c. sugar or 1 1/2 c. honey
2 3/4 c. all-purpose flour
1/2 tsp. salt
2 1/2 tsp. baking soda
2 eggs (may use Egg Beaters)
1/2 c. oil (sunflower oil)
1 c. boiling water
1 c. raisins or dates
2 c. buttermilk
3 or 4 c. unprocessed hard red spring wheat bran

Pour boiling water over dates or raisins and add baking soda. Mix other ingredients. Add cooled date mixture and mix until blended. Pour in muffin tins. Bake 350 degrees for 20 minutes. Bake at 325 degrees if you use honey. 4 dozen. Will keep in refrigerator up to 4 weeks.
