PINEAPPLE COCONUT BARS 
1 1/4 c. sifted flour
1/2 c. shortening
1/4 c. sugar

Cut in shortening, using pastry blender, until mixture is nice and fine. Pat into bottom of 8x8x2 inch pan. Bake at 350 degrees for 15 minutes.

Top with 1 cup well-drained crushed pineapple. Combine 1 tablespoon softened butter, 1/2 cup sugar and 1 egg. Beat well and add 1 1/2 cup coconut. Blend well. Spread over pineapple, return to oven and bake for 25 or 30 minutes. Cut in bars.
