FLORA'S ITALIAN VEGETABLE MEDLEY 
8 oz. each fresh or frozen:
Italian cut green beans
Peas
Mushrooms
Carrots
Broccoli
Cauliflower (or any combination of your family's favorite veggies)
1/4 c. olive oil
1/2 c. Italian bread crumbs
1/2 tsp. minced garlic
2 eggs
1 c. Mozzarella cheese
Parmesan cheese
Salt and pepper

Boil vegetables until tender; let cool and dice into small pieces. In large fry pan, heat oil and garlic on low to medium heat. Stir garlic until it begins to sizzle. Add all the vegetables; saute for about 10 minutes, making sure to stir frequently to coat vegetables.

Scramble eggs together and pour over vegetables and mix well. After 3-5 minutes add the bread crumbs, again mixing well. Add Mozzarella and mix until melted. Sprinkle with Parmesan cheese. Add salt and pepper to taste. Makes about 8-10 (1/2 cup) servings.
