RAISIN PUFF COOKIES | |
1 c. dark seedless raisins 1/2 c. golden raisins 1 c. water 1 c. shortening 1 1/2 c. sugar 2 eggs, slightly beaten 3 1/2 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. vanilla extract Cook raisins in water over moderate heat until all water is absorbed. Set aside until cool. Cream shortening, sugar, eggs until fluffy. Sift flour and soda and salt. Add to creamed mixture along with cooked raisins and vanilla. Shape dough into small balls. Roll each ball in granulated sugar. Place on greased cookie sheet. Bake in preheated oven at 350 degrees about 15 minutes. |
