BAKED FISH 
1 lb. white fish fillet
1/4 c. lemon juice
1/4 c. water
1 sm. bay leaf
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. butter
1 tbsp. grated onion
3 tbsp. flour
2 egg yolks
1 lb. spinach or 1 pkg. frozen
1 (2 oz.) can mushrooms

Drain mushrooms and reserve liquid. Combine lemon juice, water, bay leaf, salt and pepper. Pour over the fish and marinate for 1 hour. Drain liquid into a bowl and add mushroom liquid and water to make 1 1/2 cups. Melt butter and add onion and flour, then stir in liquid slowly and cook until smooth and thick. Remove bay leaf. Add sauce to egg yolks and mix, add mushrooms. Cook spinach and drain, place in greased baking dish, top with the fish and sauce. Dot with butter and bake for 30 minutes. Serves 4.
