APPLE CAKE WITH NUT TOPPING 
3/4 c. cooking oil
2 c. sugar
2 eggs, beaten
3 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 c. chopped nuts (walnuts)
3 c. chopped apples (with peelings)

Mix oil, sugar and eggs and blend well. Add dry ingredients and vanilla by hand. Blend in nuts and apples. Spoon batter into a well greased tube pan or bundt pan. Bake at 350 degrees for 1 hour. Remove from oven and pour topping over cake. Return cake to oven and bake 15 minutes more. Cool on a wire rack. Slide knife around cake to loosen before removing from pan.

TOPPING:

1 c. light brown sugar
1 stick butter
1/4 c. orange juice

Cook over low heat for 3 minutes after the mixture starts to boil. Pour over cake and continue as desired.
