DIJON SEAFOOD SALAD 
1 (8 oz.) pkg. frozen crab or imitation crab meat
1/4 c. low-fat plain yogurt
1/4 c. mayonnaise
2 tbsp. skim milk
1 tbsp. chives, chopped
2 tsp. Dijon style mustard
4 c. lettuce, shredded
1 (15 oz.) can garbanzo beans, chilled & drained
1/4 c. green or red sweet pepper, chopped
1 med. cucumber, thinly sliced

Thaw crab meat. Cut any large pieces into bite-size pieces.

For Dressing: Mix together yogurt, mayonnaise, skim milk, chives and mustard.

Line 3 plates with shredded lettuce; combine garbanzo beans with chopped pepper; place a 1/3 of the bean mixture in the center of each plate. Arrange cucumber slices and crab around bean mixture. Drizzle dressing over salads.
