HURRICANE OATMEAL CAKE 
1 c. oatmeal
1 1/4 c. boiling water
2 eggs
1 c. granulated sugar
1 c. brown sugar
1/2 c. vegetable oil
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

TOPPING:

1 c. coconut
1 c. brown sugar
6 tbsp. melted butter
1/2 c. chopped pecans
1/4 c. evaporated milk

Combine oatmeal and boiling water; set aside. Beat together eggs, sugars and oil until blended. Add sifted flour, soda, salt and cinnamon; add oatmeal mixture. Pour into greased 13 x 9 inch baking pan.

Bake at 350 degrees for 30 to 35 minutes. Mix topping ingredients until moist. Spread over cake. Broil until topping is light brown and crunchy, about 2 minutes.
