INGE'S BANANA CAKE | |
2 c. sifted flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 c. buttermilk 2 eggs 1/2 c. shortening 1 c. sugar 1 1/2 c. banana pieces 1 tsp. vanilla extract 1/2 c. nuts Heat oven to 350 degrees. Grease and flour two 8 inch cake pans. Sift flour, baking powder, baking soda and salt together into large mixing bowl. Put sugar, shortening, buttermilk, bananas, eggs and vanilla into blender container, cover and process at MIX until smooth. Remove cap to add nuts, continue processing until nuts are chopped. Pour into dry ingredients and mix well. Pour into prepared pans and bake 35-40 minutes. Cool in pan for 5 minutes before removing. FROSTING: Add slices fresh bananas (dipped in lemon juice to prevent browning) to either whipped cream or Cool Whip frosting. Split each cake layer in 2-3 layers of filling. |
