PEANUT BRITTLE (MICROWAVE) 
1 c. sugar
1/2 c. light. corn syrup
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
1 1/2 c. salted peanuts

Combine sugar, syrup, and salt in a 2 quart casserole. Microwave on HIGH for 5 minutes. Stir in peanuts. Microwave 3 to 5 minutes on HIGH stirring after 3 minutes until syrup is lightly browned. Stir in butter, vanilla and soda until light and foamy. Spread to 1/4 inch thickness on buttered cookie sheet. When cool, break into pieces. Makes 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
