STRAWBERRY SPINACH SALAD 
1/3 c. salad oil
2 tsp. lemon juice
1 lb. fresh spinach leaves
4 oz. Cheddar cheese, shredded
3 tbsp. red wine vinegar
1 tsp. powdered ginger
1 c. fresh strawberries, sliced

Mix together the oil, vinegar, lemon juice, and ginger. Wash spinach leaves thoroughly and drain well. Tear into bite size pieces. Add sliced strawberries, and shredded cheese. Drizzle dressing over all and toss lightly. Serve immediately.
