ZUCCHINI QUICHE 
3 c. uncooked, without skin, zucchini, diced
1/2 c. grated Romano cheese
1/4 c. chopped fresh parsley
1 lg. onion, chopped fine
1 c. Bisquick
3 lg. eggs, beaten
1/3 c. Wesson or Sunflower oil
Salt & pepper (use sparingly)

Mix all dry ingredients. Add beaten eggs and oil. Pour into 9 inch greased pie pan. Bake at 350 degrees for 45 minutes or until golden brown.
