PEANUT BUTTER PIE 
1 baked 9-inch pie crust (Ritz)
1 env. plain flavor Knox gelatin
1/4 c. milk
1 tsp. vanilla
1 stick butter
1 c. confectioners' sugar
4 oz. soft cream cheese
1/2 c. smooth or crunchy peanut butter (Jif)
1 (9 oz.) Cool Whip

Cool pie crust, dissolve gelatin in milk, set aside. Mix peanut butter, stick of butter and cream cheese. Blend until smooth. Add dissolved gelatin, mix in sugar, vanilla, then fold in Cool Whip. Pour into pie shell. Chill for at least 1 hour.
