LITTLE CHEESECAKES 
3 (8 oz.) pkgs. cream cheese
1 1/2 c. sugar
4 lg. eggs
1 tsp. vanilla
Vanilla wafers
1 can cherry or strawberry pie filling
Paper muffin cups

Mix cream cheese, sugar, eggs and vanilla until smooth. Put one vanilla wafer in bottom of paper muffin cup inside muffin tin. Fill each cup about 2/3 full. Bake at 350 degrees for 20 to 25 minutes. Cool. Top with pie filling. Refrigerate. (Makes 30 to 36, depending on how much you fill each one.) (I think these would be delicious made with ginger snaps instead of vanilla wafers.)
