COCONUT BREAD PUDDING 
8 slices bread
4 c. warm milk
4 egg yolks
1 egg white
1 sm. can evaporated milk
1 tsp. almond extract
1 c. sugar
1 1/2 c. coconut
1/2 stick butter, melted

Soak bread in warm milk. Beat egg yolks and egg white, gradually add evaporated milk, almond extract and sugar. Add to bread mixture. Add coconut and butter. Pour in baking dish. Bake in 350 degree oven for 40 to 45 minutes. Top with meringue.

MERINGUE:

3 egg whites
1 tsp. almond extract
1/2 tsp. cream of tartar
3 tbsp. sugar

Beat egg whites and cream of tartar until stiff. Add sugar and beat again. When pudding is cooked, spoon meringue over and bake until golden brown.
