PEACH POT (CANNED) 
1 gallon peaches, washed, pits removed, sliced thin & not peeled
4 c. sugar
2 c. distilled vinegar

Soak slices overnight in sugar and vinegar. Next day, cook peaches over low heat until very thick, stirring often. This usually takes all day. May be frozen or canned. Tastes very much like dried peaches. Great for fried pies.
