CHOCOLATE RUM CAKE | |
1/2 c. pecans, chopped 1 pkg. Devil food cake mix 4 oz. pkg. instant vanilla or chocolate pudding mix 1/2 c. light rum 1/2 c. water 1/2 c. oil 4 eggs 1/4 c. butter 1 c. sugar 1/4 c. rum 1/4 c. water Grease a 10 inch tube pan. Put nuts in the bottom of the pan. Blend cake mix, pudding mix, rum, water, oil and the eggs. Mix 2 minutes at medium speed. Pour into the pan. Bake about 1 hour at 325 degrees or until top springs back when lightly touched. Boil butter, sugar, rum and water for two minutes. Shortly after removing cake from oven, while it is still in the pan, spoon glaze over top of cake. Cool cake 30 minutes in the pan, then turn out onto serving plate. Just before serving, sprinkle with confectioners' sugar. |
