BREAD PUDDING 
18 slices of bread cut in halves
4 c. of light cream
1 c. sugar
1 c. water
1 tsp. vanilla
12 med. apples, cored, peeled and sliced
4 eggs
1 tsp. ground cinnamon
4 tbsp. butter

Place bread slices in a single layer in a shallow pan. Shake 1/2 of the cream on the bread.

In a medium saucepan mix sugar and water, bring to boil. Cover. Reduce heat and simmer 5 minutes. Stir in vanilla and return to heat. Add about a third of the apple slices, and simmer each portion for about 3 minutes.

When all apples are poached line a buttered shallow 2 1/2 quart baking dish with about a third of the bread slices, top with half of the apples. Make a layer of another third of the bread and cover it with apples. Repeat until all apples and bread are in pan. Beat eggs slightly, mix in cinnamon. With the juice for the apples pour the egg mixture and the juice over the bread and dot with butter.

Bake at 350 degrees until top layer of bread is brown and crusty about 1 hour.
