SPINACH LASAGNA 
2 (14 oz.) cans spinach (or frozen, thawed, or fresh steamed)
1/8 tsp. ground nutmeg
1 1/2 c. lowfat cottage cheese
1 egg, beaten
5 tbsp. grated Parmesan cheese
9 lasagne noodles
Vegetable cooking spray
1 (15 1/2 oz.) jar spaghetti sauce
1/2 c. shredded Mozzarella cheese

Place spinach on paper towel and squeeze until barely moist. Sprinkle with nutmeg.

Combine cottage cheese, egg, 3 tablespoons of the Parmesan cheese. Cook lasagne noodles according to package directions. Coat an 8x12x2 inch pan with cooking spray. Lay 3 noodles in pan. Spoon on spaghetti sauce. Top with cottage cheese mixture. Repeat layers of noodles and cover with spinach. Top with layer of noodles and cover.
