ZUCCHINI CASSEROLE IMPERIAL 
4 c. sliced zucchini, unpeeled

(Cook until just tender and drain.) 1 onion, chopped 1/4 c. green peppers, chopped 1 c. mayonnaise 1 c. grated Parmesan cheese Salt and pepper to taste 1 tbsp. butter 2 tbsp. bread crumbs

In large bowl, beat eggs. Stir in mayonnaise, onion, green peppers, cheese, salt and pepper. Add drained zucchini and dot with butter. Top with bread crumbs. Bake at 350 degrees for 30 minutes.
