CHICKEN WITH MUSHROOMS 
2 tbsp. oil for frying chicken
1 lb. chicken, cut into 2 inch pieces
2 c. water
1 tomato, sliced
1 sm. onion, sliced
1 bottle pimientos
1 can straw mushrooms, drained
2 tbsp. shoyu
1 tsp. salt

Fry chicken then place on platter. In a separate pot boil water with tomato, onion, pimientos, straw mushrooms, shoyu, and salt. Mix well, then add pieces of fried chicken. Turn heat down, simmer for 5 minutes. Serve hot.
