APPLE LUNCHEON LOAF | |
1/4 c. shortening 2 eggs, beaten 1 tsp. baking powder 1 tsp. salt 2 c. grated, peeled raw apples Cinnamon 2/3 c. sugar 2 c. flour, sifted 1 tsp. baking soda 1 tsp. vanilla 1/2 c. chopped nuts Cream shortening and sugar until fluffy. Add eggs beating until smooth. Sift flour; measure and sift twice again with baking powder, soda and salt. Add to creamed mixture alternately with flavoring and chopped apple. Fold in nuts. Pour batter into greased 7 1/2x2 3/4 inch loaf pan. Bake at 325 degrees for 1 hour. For added sweetness, sprinkle top of loaf with mixture of 1 1/2 tablespoon additional sugar and 1 1/4 teaspoon cinnamon before baking. |
