BAKED HAM OMELET 
2 lbs. Jack cheese, grated
2 lbs. Cheddar cheese, grated
1 qt. finely diced ham
2 c. butter, melted (1 lb.)
2 c. flour
1 tbsp. + 2 tsp. baking powder
4 doz. eggs, beaten
4 lbs. sm. curd cottage cheese

Grease two large stainless steel baking pans. Beat eggs; stir in cheese, ham, cottage cheese, flour, baking powder and butter. Pour mixture into pans (being careful that all the heavier ingredients are divided equally between the two pans). Bake 400 degrees for 30 minutes; reduce heat to 350 degrees and bake 30 to 45 minutes or until puffy and light golden brown. Serve immediately. Serves 50.
