FETTUCINI 
2 med. onions
1 med. bell pepper, chopped
1 1/2 sticks butter
1/2 lb. Velveeta cheese
2 cloves garlic
Parmesan cheese
3 green onions, chopped
2 ribs. celery, chopped
1 tbsp. flour
2 lbs. crawfish, peeled
1/2 pt. half & half cream
8 oz. fettucini noodles
1 tsp. parsley

Saute onions, bell pepper, celery and green onions in butter until soft. Add flour, parsley, crawfish and cook for 15 minutes. Add Velveeta cheese, cream and garlic. Cook another 15 minutes. Cook noodles in separate pot until tender. Drain and rinse in cold water. Fold noodles and sauce into casserole dish. Sprinkle with Parmesan cheese. Bake at 350 degrees on low for 15 minutes. Serve.
