POTATO CASSEROLE | |
8 medium potatoes 1 bay leaf 4 T butter, melted 1 can cream of mushroom soup 1/4 t salt 3 green onions, chopped, including tops 1 c grated cheese Put washed, unpeeled potatoes in boiling water with bay leaf and boil until tender. Let cool. Preheat oven to 325 F. Peel potatoes and coarsely grate, add melted butter, sour cream and soup. Stir until smooth. Add green onions and half of cheese. Cover and bake for 45 minutes. Remove cover and add remaining cheese, then bake at 350 F for 15 minutes or until top is browned. |
