BAKED STEW FOR A CROWD 
8 lb. stew meat
4 onions, sliced
4 stalks celery, sliced diagonally
24 carrots, cut in chunks
8 tsp. salt
1/4 c. sugar
1/2 c. tapioca
2 c. tomato juice

Place the meat in a large shallow roasting pan and add vegetables. Mix salt, sugar, and tapioca with tomato juice. Pour over the meat and vegetables. Cover pan with heavy duty foil. Bake at 250 degrees for 5 hours. Uncover midway through and stir. Serves about 24.
