POLISH PICKLES 
1/2 tsp. alum
1 clove garlic
2 tsp. dill seed
1 hot pepper
1 tbsp. pickling spice
2 tbsp. chopped onions

Wash and pack pickles in 8 quart jars, for each jar, put the above ingredients.

BRINE:

1 qt. vinegar
3 qt. water
3/4 c. salt

Bring to rolling boil. Pour over pickles and seal.

Polish pickles come in basic two varieties, one with vinegar, one without. When they are called brine pickles there is never any vinegar. Vinegar tends to be used by commercial producers mainly.
