ENGLISH TEA CAKE 
3 c. flour
1/4 tsp. salt
1 tbsp. sugar
2 tbsp. butter
1/2 c. raisins
1 tbsp. lemon or orange peel
1 egg
Milk to mix

Mix flour and salt. Add sugar and rub in butter, add fruit. Beat the egg and add with the milk to make a soft dough. Knead lightly on a floured board. Make into a round abut 1/2 inch thick. Mark into eight pieces. Brush with milk and sprinkle with sugar. Bake at 425 for 10 to 15 minutes. Serve buttered.
