CATFISH STEW 
3-4 strips bacon
Potatoes
Onions
Catfish
Salt
Pepper
butter

Use heavy pot. Put bacon in pot and fry until crisp. Add a layer of sliced potatoes, layer of sliced onions, layer of catfish, salt, and pepper. Repeat layers until you have as much as needed for a meal. Place a stick of butter on top. Add water (depending on the amount of soup you want.) Cook on low for 1 hour or until tender. Serve over light bread with hush puppies and pickles.

Another way to prepare: Cook fish first and remove from bones, using meat instead of whole fish. Use the broth for water.
