PERFECT CORN BREAD | |
1 c. sifted all-purpose flour 1/4 c. sugar 4 tsp. baking powder 1 c. yellow cornmeal 2 eggs 1 c. milk 1/4 c. shortening Sift flour, sugar, baking powder and cornmeal together in a large bowl. Add eggs, milk and shortening. Beat with electric mixer until smooth. (Do not overbeat). Spoon batter into greased cornstick pans, filling 2/3 full. Bake at 425 degrees for 12 to 15 minutes. Yield: 18 servings. |
