ZUCCHINI CASSEROLE 
6 c. unpeeled sliced zucchini
1/2 c. chopped onion
Salt
1 can cream of chicken soup
1 1/2 c. sour cream
1 1/2 c. shredded carrots
1 pkg. Stove Top stuffing mix
1/2 c. melted butter

Cook zucchini, onion and salt 5 minutes; drain. Combine chicken soup, sour cream and carrots and fold into zucchini. Combine stuffing mix and butter and spread 1/2 mixture into greased dish, spoon vegetable mixture over top. Sprinkle remaining stuffing mix over the top of the casserole and bake 25 to 30 minutes at 350 degrees.
