PUFF PASTRY DOUGHNUTS | |
1 c. water 1/2 tsp. salt 2 tbsp. sugar 1 tsp. vanilla 2 tbsp. butter 1 c. sifted flour 3 lg. eggs Heat water, salt, sugar and butter until the butter is completely melted and the water starts to boil. Remove from heat and add flour all at once beating constantly until the dough forms a smooth and glossy ball. Add the eggs one at a time, beating until smooth after each egg. For beating and stirring use a wooden spoon. Cover and chill for 2 hours. Place the dough in a pastry bag with a 1/2 inch star tube. Squeeze 3 inch long pieces onto a floured baking sheet. Let stand for 1 hour to dry. Drop into a 375 degree deep fryer and fry until golden brown. Drain on paper towels, then roll in sugar. Makes about 2 dozen. |
