CHOCOLATE SOUFFLE 
2 oz. butter
2 tbsp. flour
6 oz. milk, warm
1/4 lb. bitter chocolate
2 tbsp. water
6 tbsp. sugar
3 eggs
1/2 tsp. vanilla

Melt butter, stir in flour. Add warm milk; stir until well blended. Melt chocolate. Add sugar and water and stir well until smooth. Combine mixtures. Separate egg yolks from whites and beat yolks until lemon color. Add them to chocolate mixture. Add vanilla. Beat egg whites stiff and fold in carefully. Bake in a buttered casserole 20 minutes in 350 degree oven.
