BEST EVER MOIST OATMEAL COOKIES 
ix together:

1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder

ix separately (can be done in mixer) :

1 stick butter
1 c. sugar + 1/2 c brown sugar
1 c. applesauce (unsweetened)
1 pkg. instant pudding (I like butterscotch)
1 tbsp. brandy flavoring
1 tbsp. vanilla flavoring
2 eggs
3 c. rolled oats

Preheat oven to 350 degrees. Gradually add the flour mixture. Stir in 1 cup chopped nuts, 1 cup raisins or dates, 1 cup chocolate chips, 1 cup butterscotch chips (these are optional but are deeeeeelicious! Bake on slightly greased pan 9-10 minutes or just until brown on edges; do NOT overbake. May be dropped onto pan by spoonsful. Makes 4-5 dozen.
