MOIST AND CHEWY OATMEAL COOKIES 
3/4 c. oil
1 c. brown sugar
1/2 c. granulated sugar
1 egg
1/4 c. water
1 tsp. vanilla
3 c. rolled oats, uncooked
1 c. flour
1 tsp. salt
1/2 tsp. baking soda
3/4 c. coconut

Preheat oven to 350 degrees. Beat together oil, sugars, egg, water and vanilla until creamy. Add remaining ingredients; mix well. Drop by teaspoonfuls onto ungreased cookie sheet. Bake for 7 to 8 minutes. Makes approximately 5 dozen.
