GREEK SHRIMP PASTA 
1 1/2 lb. cleaned raw shrimp
2 cloves garlic, minced
3 tbsp. butter
1/4 cup white wine
1 (28 oz.) can diced tomatoes, drained
3/4 cup chopped cilantro
5 oz. Feta cheese, chopped rough
1 (16 oz.) box linguine pasta noodles, cooked al denté
grated Parmesan cheese, for sprinkling

In a large sauté pan on high heat sweat garlic in butter. Deglaze with white wine. Pour in tomatoes, mix well. Add cilantro and stir. Add Feta cheese and stir. Turn down heat to a low simmer for 30 minutes stirring occasionally.

Cook linguine according to package directions to al denté. Add raw shrimp (without shell) and "bury" shrimp in sauce - cover and let simmer for 8 minutes (so shrimp can cook). When shrimp is pink, its ready.

Drain linguine VERY well (or sauce will be watery). Plate up each dish with pasta, top with sauce and sprinkle with Parmesan cheese -- SO GOOD!!
