LITTLE CHEESECAKES 
3/4 c. sugar
2 eggs
1 tsp. vanilla
1 tbsp. lemon juice
1 (21 oz.) can cherry pie filling
Vanilla wafers

Beat cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy. Put one wafer in each aluminum lined cupcake cup (aluminum only). Fill cups 2/3 full (they sink down when cooled).

Bake in 375 degree oven for 15 minutes or until set. Remove from oven; let cool. Top with cherry filling. Amount depends on size of cupcake pans. I get 14-15. Other pie fillings may be used, such as blueberry, pineapple, etc.
