CHICKEN - RICE ORIENTAL 
1 sm. clove garlic
2 tbsp. oil
1 1/2 c. diced, cooked chicken, beef, or pork
1/2 med. red or green pepper strips
1/2 tsp. pepper
2 c. water
1 1/2 c. Minute Rice
1 1/2 c. shredded raw spinach
1 tbsp. soy sauce

Saute garlic in oil in skillet or Wok until lightly browned. Add chicken, pepper, red peppers, and water. Bring quickly to a boil over high heat. Stir in rice; cover.

Remove from heat and let stand 5 minutes. Just before serving, add spinach and soy sauce, tossing lightly. Serve with additional soy sauce if desired. Makes 4 servings.
