PEANUT BUTTER CHOCOLATE CHIP
COOKIES
 
1 c. sugar
1 c. firmly packed brown sugar
1/2 c. butter, softened
1/2 c. shortening
1 c. chunky peanut butter
1 1/2 tsp. vanilla
2 eggs
2 c. flour
1 1/2 tsp. baking soda
1/4 tsp. salt, optional
12 oz. semi-sweet chocolate chips

Heat oven to 350 degrees. In large bowl beat sugar, brown sugar, butter and shortening until light and fluffy. Add peanut butter, vanilla and eggs; blend well. Lightly spoon flour into measuring cup, level off. Stir in flour, baking soda and chips; mix well. If necessary chill dough about 45 minutes for easier handling.

Shape dough into 1 inch balls; place on ungreased cookie sheets. Flatten with bottom of glass dipped in sugar. Bake at 350 degrees for 10-13 minutes or until light brown.

Makes 7 dozen.
