BANANA NUT CAKE | |
6 ripe bananas 1/4 lb. butter 1/2 c. Wesson oil 2 c. sugar 1 1/2 c. raisins and dates 4 eggs 3 c. flour 2 1/2 tsp. cinnamon 1 1/2 c. chopped nuts 2 1/2 tsp. cloves 1 1/2 tsp. allspice 2 tsp. baking soda 1/2-3/4 tsp. salt Cream butter, oil and sugar. Add eggs one at a time, beating after each. Sift spices, soda, salt and flour. Add to egg mixture. Add raisins or dates (or both) and nuts. Mash bananas and add last. Bake in tube pan 1 1/2 hours at 325 degrees. Half of this recipe makes a good-sized cake in a tube pan. To make half, cook 50 minutes. |
