SPANISH BEEF RICE 
1/4 c. vegetable oil
1/2 med. green pepper, diced
1 c. regular uncooked rice
Dash of pepper
1 med. thin sliced onion
1/2 lb. ground beef
16 oz. tomato sauce
1 tsp. prepared mustard, optional

Heat oil in skillet; add onion, green pepper, beef and rice. Stir over high heat until lightly browned. Add tomato sauce and remaining ingredients; mix well. Bring quickly to a boil. Cover tightly and simmer 25 minutes. 1/2 cup of grated cheese may be added if desired just before serving time. Serves 4.
