3 lbs - 3" chunks of lamb or pork, neck/shoulder meat 5 onions, grated 3 garlic cloves, minced juice of 1/2 a lemon 1/2 cup canola oil 1 tbsp ground cumin 1 tsp turmeric powder 1 tsp ground coriander 1 tsp salt 1/2 tsp MSG (optional) 1 tsp paprika Mix grated onions, minced garlic, canola oil, lemon juice, and marinade meat for no more than 3 hours. Skewer meat through large (1/8"-1/4" thick) metal skewers evenly so that all the meat can rotate evenly. Set rotisserie on high speed while over high heat for 5-8 minutes, or until sizzling and light golden brown color on the meat. Wrap meat with aluminum foil and set rotisserie on low speed over medium heat for 1 hour, or until meat starts to foam. Remove aluminum foil, and sprinkle cumin, turmeric, coriander, salt and MSG (optional) mixture over meat, and set rotisserie back to high speed over high heat for another 3 minutes. Remove meat from skewers, sprinkle with paprika and serve. |
